A Perfect Summer Recipe

Greetings! I’m so delighted to be here today. I’m celebrating the release of TRUST WITH A CHASER, my summer romance featuring a May/December pairing between a hot cop and a younger bar owner. Food is a huge part of this book and this series as my hero, Mason, and his friends are opening a tavern with an emphasis on local food and drink. I had so much fun coming up with food for them to serve and more casual food for Mason to cook Nash, his co-hero.

Tour Teaser GraphicTo celebrate the book’s release, I wanted to share with you my personal favorite summer recipe, one that I’ve perfected over the last decade and a half. To me, nothing says summer like cobbler, and my cobbler is very special because it can be made to suit a variety of food allergies/dietary needs and still come out AMAZING. This makes a big 11×13 pan. Feel free to halve it, but I guarantee you that the 11×13 size will get eaten. Leftovers make an incredible breakfast.

Annabeth’s Amazing Cobbler

4-6 pints of berries (I use a generous amount of berries in mine because we adore the fruit part. 3 pints and a smaller pan will give you more topping/less fruit. I love a mixture of strawberries, blueberries, raspberries, and blackberries, but go for whatever’s local and in season. Also 6 large, ripe peaches that have been sliced can be subbed).

1 tablespoon cornstarch (or flour mix of choice. If your berries look incredibly saucy, go to 2 tablespoons)
¼ to ½ cup sweetener of choice (I use stevia in the raw, but any sugar or sweetener works here, even honey. I use the smaller amount of sweetener because we love letting the tart flavor of the berries be the star.)
2 cups flour of choice (I use King Arthur’s GF Blend, but regular flour also works terrific)
¾ cup sweetener of choice
2 teaspoons baking powder
1 teaspoon baking soda
Pinch of salt
2 eggs
½ cup melted and cooled butter OR neutral oil like light Olive or Canola
2 containers vanilla yogurt (I use triple zero but non-dairy yogurts can work well here too) OR 1 heaping cup plain yogurt OR 1 cup milk of choice + 2 tablespoons lemon juice.

1. Preheat oven to 375. Toss fruit with cornstarch and sugar/sweetener and spread in an 11×13 pan. I use a deep dish Pyrex.
2. Mix dry ingredients together in a large bowl. Add eggs, oil/butter, and yogurt and mix well. This will be a THICK batter.
3. Drop batter by tablespoons on the top of the cobbler.
4. Set cobbler on a cookie sheet in the oven. (Important! This cobbler WILL run over! Save your oven and use a large sheet under the pan!). Bake for 35-45 minutes or until the topping is puffy, golden, and a fork comes out clean and the fruit is bubbling with thick juices.
5. Serve at once or at room temperature. Fresh whipped cream is the perfect accompaniment!
